My son is being extremely clingy this week, some sort of phase no doubt, but that combined with no oven, and none of my usual condiments I am feeling slightly fraz fraz. Nevertheless, I have created the wonder that is cheesy triangles, yes that’s the name, because my creative brain has gone bye bye.

These little beauties allowed me to prepare Harry’s diner tonight as he was happy to sit in a highchair and not on me, for a little over 5 minutes.

Is it bedtime yet?

Ingredients:

  • A generous handful of grated tasty cheese
  • 2 wholemeal wraps/Lebanese bread
  • 1 tsp butter or olive oil

Sprinkle cheese over the surface of one wrap, place the other on top. Heat butter in a frypan over medium and place the bread down, fry gently for a minute, then flip and fry until cheese is completely melted.

“I am a full time mum to a beautiful little (big) boy, Harry. I find I don’t have two free hands at any one time, and so ‘one handed cooks’ was born. My recipes are all quick and easy to make, leaving you time to wipe a nose, give a cuddle or feed a hungry child”
