Ingredients
125 gram Butter
1 cup Caster sugar
0.33 cup Desiccated coconut
2 Eggs-lightly beaten
1 tbsp Lemon zest
1.5 cups Self raising flour
1 cup Milk
- Lemon Icing
1.5 cups Icing Sugar (Sifted)
0.5 cup Desiccated coconut
1 tsp Lemon zest
0.25 cup Lemon juice
Directions
- Muffin Method
- Preheat the oven to 180 degrees.
- Set out 12 standard cupcake wrappers into a 12 hole muffin tin.
- Beat together the butter and sugar until pale and fluffy.
- Add the beaten eggs and mix well.
- Stir in the coconut and lemon zest.
- Gently fold in the sifted flour alternatively with the milk until combined.
- Pour into the muffin cases and bake for 20 minutes or until they are nice and golden.
- Remove the lemon muffins from the muffin tin and place on a rack to cool completely.
- Icing Method
- To make the icing beat together the icing sugar, coconut and lemon juice.
- Spread on top of the cooled muffins and sprinkle with the lemon zest to decorate.
Notes
- Delicious Lemon Muffins can be frozen un-iced for up to two months

Just made these and they are sooo yummy! I made mini ones and cooked for 15 min, my 21month old son devoured 3!
They smell amazing in the oven now. How long can they stay on an air tight container. Need them for 2 data time. Or should I just freeze them ?
What kind of coconut? Dried, fresh, oil???
