Always have a cake on hand with this recipe to make your own homemade cake mix.  Wouldn’t it be nice to know exactly what ingredients are in the mix with no added preservatives or other nasty additives.  The basic mix will end up being a lot cheaper too. To make them up just add the required wet ingredients and there you go. I will share with you a basic cake mix recipe and explain how to use it.

Basic Vanilla Cake Mix

Dry Ingredients:

  • 2 cups self raising flour
  • 2/3 cup sugar

add these to a bag or container if your prefer.

Basic Chocolate Cake Mix

Ingredients:

  • 2 cups self raising flour
  • 2/3 cup sugar
  • 2 tablespoons cocoa

Wet ingredients:

  • 125 grams melted butter
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3/4 cup of milk

To make the cake simply combine all wet ingredients and add them to the dry mix and combine them well. Then just put it all into your cake tin or muffin pans and bake. You can also add other goodies to these if you like such as chocolate chips, sultanas or even some 2 tablespoons cocoa to make it chocolate (you may need to add a little more milk if you do).

You’re only limited by your imagination when it comes to making up mixes for later use!  Sealed in a ziplock bag the mixture is good for up to two months – and even longer if you vacuum seal it or keep it in the freezer.

    I made this in a muffin tray. Baked at 180'c for app. 20 minutes and they turned out perfect
