Ingredients

  • 1 cup Water-to boil lentils in

  • 0.33 cup tinned Lentils

  • 0.5 cup Sugar, Castor

  • 75 gram Butter

  • 2 Eggs

  • 2 tbsp Golden Syrup or Treacle

  • 1.5 cups Flour Self-Raising

  • 1 tsp Cinnamon

  • 1 tsp Ginger

  • 1 tsp Nutmeg

  • .5 cup Sultanas

  • 2 Carrots-grated

Directions

  • Preheat oven to 180 degrees.
  • Bring lentils to the boil, simmer uncovered until tender, drain well.
  • Cream butter and sugar, add treacle, mix well. Add eggs and beat well.
  • Stir in carrots, lentil, sultanas, sifted flour and spices, mix well.
  • Spread mixture in prepared loaf pan 15 x 25cm.
  • Bake in moderate oven for about 1 hour.
