You can make them a few days ahead and keep them in the fridge until needed. Serve with some additional fruit mince or some double cream and garnish with festive touches, these cheesecakes are not only a treat for the palate but also a feast for the eyes.

The secret to our Fruit Mince Cheesecakes? They only contain dried fruit – not exactly fruit mince  – so you don’t have to go and buy fruit mince specially!

Method

  1. In a food processor, process the Gingernut biscuits until they resembles breadcrumbs. Add butter and process to combine.

  2. Press mixture into a muffin pan that has been lined with foil (push the foil into each hole).

  3. Refrigerate for 20 minutes or until firm.

  4. Preheat oven to 160 degrees.

  5. Process the cup of dried fruit and nut in the food processor for one minute or until they form a small crumb like consistency.

  6. Using electric beaters, beat cream cheese, melted white chocolate and sugar together until smooth.

  7. Add sour cream, eggs and fruit and nut mixture and mix thoroughly. Spoon into biscuit bases.

  8. Bake at 160 degrees for 20-25 minutes or until firm. Turn off oven, open door slightly and allow cheesecakes to cool in oven.

  9. Refrigerate for 2 hours or overnight.

  10. Dust with icing sugar and serve
