Ingredients

  • 1 number Eggs

  • 1.5 tbsp Milk

  • 0.5 number Crust of bread -(those dodgy bits at the end of a loaf that everyone seems to throw away!)

  • 2 tsp Cream cheese

  • 1 number Slice ham-diced

Directions

  • Beat egg and milk together with a fork, adding salt and pepper to taste.
  • Tear bread into small pieces and add to egg mix with cream cheese and ham.
  • Sprinkle with thyme.
  • Microwave for approximately 1 minute 30 seconds, but increase or decrease this depending on how solid you like your quiche.
  • Recipe Hints and Tips:
  • Coffee Cup Quiche is not suitable to freeze.
  • Best served straight out of the microwave.

This is one of my favorite breakfast foods, but I don’t always treat myself to it when I feel the need. To be honest, I seldom have an hour to spare to whip one up and  I’m not usually that good at planning that far in advance!
