  • 1 tbsp Honey
  • 4 cups Cornflakes (or crunchy nut cornflakes!)

Cornflake Honey Joys are definitely a favourite of mine.

I love making these and they taste so good. They’re great for a snack for the kids lunches as well!

Method

  1. Preheat the oven to 150 degrees.

  2. In a medium saucepan combine butter, honey & sugar over low heat until melted & frothy.

  3. Measure out the cornflakes into a large bowl.  Pour the butter and sugar mix over cornflakes and fold gently with a wooden spoon until all the cornflakes are coated.

  4. Spoon into patty cake holders and place on a flat baking tray.

  5. Bake 150 degrees  for 12 minutes or until golden.

  6. Allow to cool & set before serving.

  7. Makes 12 large patty cakes or 24 small ones.

Recipe Hints and Tips:

  • Cornflakes can be substituted for rice bubbles.
  • Cornflake Honey Joys can be kept in a sealed air tight container out of the fridge for up to three days.
