 Dairy Free Strawberry Ice Cream

Want a dairy free, egg free strawberry ice cream?  Well you can – and it tastes fantastic.  Very refreshing and super easy (especially if you have an ice cream maker on hand!). Not so much creamy as more gelati like!

Method

  1. Wash the strawberries well and cut off the top.

  2. Place them in a food processor and process until they aren't quite liquid.

  3. Pour the strawberries into a jug.

  4. Stir in the coconut milk, vanilla extract, Natvia and salt and mix well.

  5. Pour into an ice cream maker and 50 minutes later - ta dahhhhhh.  Strawberry delight!

Recipe Hints and Tips:

  • If you don't have an ice cream maker, just freeze for 45 minutes, take out of the freezer and use electric beaters for 3 minutes - and return to the freezer overnight.
