With the hot weather here – I thought it was time to look at a few inexpensive and healthier type versions of the humble Popsicle!  Have your own recipe I can add?  Email it to Jody@stayathomemum.net.au

Pina Colada Ices
Ingredients:

  • 1 tin pineapple pieces (large)
  • 1 tin coconut milk (I use lite for less fat)
  • 1/3 cup honey

Combine the ingredients in a blender and mix until smooth.  Pour into ice block moulds (or plastic coffee cups with a teaspoon for a handle) and freeze overnight until solid.

Strawberry and Yogurt Icies
Ingredients:

  • 2 punnets (500g) strawberries, hulled
  • ¼ cup caster sugar
  • 125 g plain low-fat yoghurt
  • 1 tablespoon lemon juice
Combine in a blender until smooth and freeze in ice block moulds until solid!
Tropical Sundae
Ingredients:

  • 1 – 2 ripe mangoes
  • 1 tin skim coconut milk
  • 1 cup lemonade (fizzy!)
Remove flesh from the mangoes and puree ingredients together until smooth.  Pour into moulds and freeze overnight.
