Mini Quiches | Stay At Home Mum

These Mini Quiches freeze really well in a zip lock bag – they are perfect for when guests drop around, kids lunches, or just a snack!

Method

  1. Preheat oven to 180 degrees.

  2. Grease muffin tins well with butter and push a slice of bread into each muffin tin. You can trim the bread using a round cookie cutter if you like but not essential.

  3. In a large bowl whisk eggs, milk and cream together until well combined.

  4. Add grated cheese, diced bacon and onion and mix again.

  5. Pour the mixture into each muffin case and bake for 15-20 minutes or until golden brown.

Recipe Hints and Tips:

  • Mini Quiches are suitable for freezing for up to 3 months or keep in an airtight container in the refrigerator for up to 3 days.
  • These make great lunch box snacks!
  • Don't forget you can simply change the flavour by adding combinations like spinach and feta, sundried tomato and bacon.
