Pikelets are a great breakfast, morning tea or afternoon tea for kids and grown ups alike. They are also a great idea for school lunches.
Ingredients:
- 1 cup self raising flour
- 1/4 teaspoon bicarbonate of soda
- 1 tablespoon caster sugar
- 1 egg
- 1/2 cup milk
- 2 teaspoons canola oil
Sift the flour and bicarb together in a bowl. Add the sugar. Make a well in the centre and add the egg, milk and oil to make a nice smooth batter. Lightly grease a frypan and drop teaspoons of the batter into the heated pan. Cook until the pikelet goes all bubbly, then turn over and cook until golden.
Serve with jam or syrup.
Recipe Hints and Tips:
- This recipe can be frozen. Layer the cooked pikelets between sheets of baking paper and seal in an airtight container for up to four weeks.
