  • 1 cup Sugar, Caster
  • 1 Mango
  • 1 Passionfruit
  • 1/2 tsp Salt
  • 500 ml Cream

I had Christmas for 25 people at my house last year, and Mango Eton Mess Dessert is the one I  made.  I made enough so everyone got at least one and a half serves each and I still ran out! It’s extremely popular, easy to make and it’s delicious!!

Method

  1. Preheat oven to 120 degrees.

  2. Place the egg whites and salt in a metal bowl and mix with high speed beaters until soft peaks form.

  3. Gradually add the caster sugar spoon full at a time, whisking very well in between additions.

  4. After the last of the sugar has been added mix for an additional three minutes.

  5. Line a baking tray with baking paper.

  6. Form into 6 little piles.

  7. Put into the oven and reduce the temperate to 90 degrees.

  8. Cook for approximately 1.5 hours or until they sound hollow when tapped.

  9. Turn off the oven and leave to cool completely in the oven.

  10. Beat the cream in a bowl until thick.

  11. Cut up the mango into small pieces.

  12. Chop up the meringue into small pieces.

  13. In six tall glasses layer the meringue, cream and mango until all ingredients are used up. If you wish you can top with some passionfruit or shaved chocolate.

  14. Mango Eton Mess Dessert is not suitable for freezing.

  15. Serve immediately.

  16. You can pre-prepare everything and put it together just before serving!
