Slowcooker Lasagna? Yes even the traditional Lasagna can be done in the slowcooker!  This is the perfect recipe for entertaining or freezer cooking!

Ingredients:

  • Slowcooker Lasagna | Stat at Home Mum500 grams mince (beef or combination of beef and pork)
  • 1 brown onion, diced
  • 1 can diced tomatoes
  • 1 tablespoon crushed garlic (or two garlic cloves chopped finely)
  • 2 tablespoons tomato paste
  • 1 tablespoon sugar
  • salt and pepper to taste
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 packet of lasagna sheets

Cheese Sauce:

Ingredients:

  • 2 cups milk
  • 1 cup grated cheddar cheese
  • 1 tablespoon butter
  • 1 tablespoon plain flour
  • 1 chicken stock cube
  • salt and pepper to taste

Place your slowcooker on the low setting and spray it well with canola spray.  In a bowl mix together all the first part of the ingredients except for the lasagana sheets.  Mix well.  Cover the bottom of the slowcooker with the mince mixture, then place the lasagna sheets over the top (without overlapping – you might have to break them a bit to fit).  Next spoon enough cheese sauce over the noodles to cover (not too thick), and repeat until all the mixtures are used up. Sprinkle some extra cheese on top.

Cook on low for 6 hours or high for 4 hours.  Use a large serving spoon to ‘scoop’ out the lasagna to serve.  Serve with a salad and crusty bread.

To make the Cheese Sauce:

In a microwave proof container place the butter and the flour, microwave for 30 seconds or until the mixture is foamy, whisk in the milk, cheese and stock cube, and season to taste.  Microwave in 30 second increments until mixture is smooth and consistent and slightly thickened.

Hi Danielle, you shouldn't have to in this instance, just make sure it stays moist and keep an eye on it. Any longer and it might go gluggy.

If you were to make a Larger Lasagna by doubling amount of ingredients, would you need to increase cooking time?

So you are not layering the lasagne with the meat and cheese sauces? I might try layering it. :D

It's entirely up to you whether you cook the mince first or not Nat! It won't be lumpy as it will breakup as it cooks :-)
