Chicken and Vegetable Sausage Rolls is a twist on the normal Sausage Rolls that everyone knows. Yummy finger foods nice and easy for entertaining!

Ingredients:

  •  500 grams chicken mince
  • 1 cup wholemeal breadcrumbs
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1/2 brown onion, grated
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 tablespoons fresh spinach, chopped finely (optional)
  • 2 eggs
  • 1 teaspoon curry powder
  • 2 sheets puff pastry
In a bowl mix together all the ingredients except for an egg and the pastry.  Mix until really well combined.  Make a line of filling down the middle of the Puff Pastry and roll up.  Slice the sausage rolls on an angle and use a pastry brush to moisten the tops with the remaining beaten egg.   Bake at 180 degrees for 25 minutes or until golden brown.

Recipe Tips and Hints:

  • Uncooked sausage rolls can be frozen.  Seal with plastic wrap and they will be good in the freezer for up to three months.
  • Sausage rolls are best eaten hot on the day they are made.

    Absolutely awesome. They tasted great and made a whole heap. Unfortunately even my fussy kids were fussy and didn't like. Argh....!!!! I will be using milk instead of egg to brush as the pastry didn't crisp up enough for my liking but otherwise I will be freezing all the cooked portions. Thanks Tracey

    I have made these recently for my family and they went down EXTREMELY well!! My son took the cold left overs to school for lunch the next day and came home asking if he could have them the next day too!! I want to know, though, if I can freeze them after cooking instead of uncooked?
