Ingredients:

  • 500 grams of chicken thigh fillets
  • 1 egg
  • 1 tablespoon milk
  • 1/4 cup parmesan cheese finely grated
  • 1 cup cornflakes (crushed)
  • 1/4 cup plain flour

Cut the chicken into 3cm x 3cm pieces (approx).  Coat the chicken pieces in flour, then dip in the combined egg and milk mixture.  Finally roll in the cornflake crumbs mixed with the cheese until coated well.  Place on a baking tray lined with baking paper.  Spray with canola oil and bake at 180 degrees for 25 minutes or until the nuggets are browned lightly and cooked through.

Recipe Hints & Tips:

  • The Nuggets can be partially cooked and frozen for another day.  Cook until firm but not brown and cool until room temperature.  Then quickly place in layers between baking paper in an airtight container.  Nuggets will be good in the freezer for up to three months.

    Could these be frozen before cooking, or after cooking and then thawed and reheated when required?? Know these will be a big hit with my 2 boys :-)
