makes a truly delicious dinner! It is so simple to make, the whole family will be asking for more!!  Best of all – it will feed a family of four for under $10!

Serves 4.

Ingredients:

  • 2 – 3 large boneless, skinless chicken breast halves, roughly chopped (or you may leave them whole).
  • 2 tablespoons butter, melted
  • 1 can cream of celery soup
  • 125 grams cream cheese or cream cheese spread
  • 1/4 cup milk
  • 280 grams frozen broccoli florets or fresh broccoli
  • salt and pepper to taste.

Method

Dry chicken with paper towels and place in sprayed slow cooker.  Combine melted butter, soup, cream cheese and milk in bowl and spoon over chicken.

Cover and cook on low for 4  hours. Remove cooker lid and place frozen broccoli over chicken. Cover and cook for additional 1 hour. Serve over rice or pasta.

Hi Shontel, you can brown the chicken first if you wish, but I find that can sometimes dry the chicken out. The 4 to 6 hours cooks the chicken perfectly so there's no worries with throwing them into the slowcooker raw!

I leave it as whole thigh fillets - but it's really up to you. I did cut it up for the picture so it looked a bit nicer lol.

HI, just wondering do you cut the chicken up at any stage when you cook it in the slow cooker? Thanks

I too made it in a frying pan ,it turned out just as awesome, i made it the same way as Helen browning the chicken pieces first then i mixed all the ingredients in a jug and poured it over the top.Keep stirring though. It was ready in half the time and tastes great!

I wanted to make this on Wednesday, but ran out of time. So, I cut the chicken into smaller pieces and browned them, then added all the ingredients into a large pan with a lid and cooked it all together (I did use a tin of creamed mushroom soup insteat of the celery soup). I had to keep stirring it so it didn't stick to the pan, but it was so delicious. I would recommend this recipe. Mmmm.
