Salmon Patties My Mum used to make this for me weekly as a kid - she served it with a nice light crunchy salad - was a wonderful warm-weather food... In a bowl combine the mashed potato, salmon (flaked first), egg, flour, onion and salt and pepper. Mix until well combined. Roll balls into the breadcrumbs to form patties. Heat a pan and spray with a little canola oil – fry each side until golden. Serve with a salad.
Left overs are nice on a sandwich with tomato sauce!
