Salmon Patties

Salmon Patties My Mum used to make this for me weekly as a kid - she served it with a nice light crunchy salad - was a wonderful warm-weather food...


Ingredients:

  •  1 can red or pink salmon (about 400 grams give or take)
  • 1 1/2 cups mashed potato
  • 1/2 cup plain flour
  • 2 eggs
  • breadcrumbs
  • salt and pepper
  • 1 brown onion diced very finely
  • canola oil for frying

In a bowl combine the mashed potato, salmon (flaked first), egg, flour, onion and salt and pepper.  Mix until well combined.  Roll balls into the breadcrumbs to form patties.  Heat a pan and spray with a little canola oil – fry each side until golden.  Serve with a salad.

Left overs are nice on a sandwich with tomato sauce!
