Slowcooker Barbecue Pork Roast - I’m usually not a fan of doing pork roasts in the slowcooker, only because they are so good in the oven with crackling etc.  But I’ll make an exception for this one – it’s delicious! Best of all you can use the leftovers on a buns for dinner the next night!

Ingredients:

  • 1 Pork Shoulder Roast or similar
  • 1 onion cut into small rings
  • 2 tablespoons plain flour
  • 1 tablespoon crushed garlic
  • 3/4 cup barbecue sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder

Placed the thinly sliced onions on the bottom of the slowcooker and sprinkle the flour over the onions.  Place the pork roast on top.  In a cup combine the barbecue sauce, chili powder, cumin and garlic. Smother the sauce over the roast.  Cover and cook on low for 8 hours.

When the roast is cooked, slice and place on the plate and smother in the slowcooker sauce.  Serve with fluffy mashed potato and seasonal veggies.

To serve on a bun, shred the roast and reheat with the sauce – delicious!
