  • 200 g Rocket
  • 100 g Walnuts
  • Lemon Twist Dressing
  • 1/3 cup Olive Oil
  • 1 tbsp Lemon Juice

I’m always looking for a yummy salad that tastes good, fills me up and still ticks a few healthy boxes. This  Pear and Blue Cheese Salad was absolutely delicious and so easy to make, even the dressing was fancy without the fuss.

Method

  1. Mix olive oil, lemon juice and salt and pepper in a small jar. Shake until well combined.

  2. Place rocket as a 'bed' in the salad bowl.

  3. Thinly slice pears, removing core and seeds first (they don't taste great, not that we tried). Place on top of rocket.

  4. Roughly chop walnuts and sprinkle over salad.

  5. Shake dressing and drizzle over salad. Toss and serve!

Recipe Hints and Tips:

  • Pear and Blue Cheese Salad is not suitable to store or freeze and best served within an hour of meeting.
  • If blue cheese is not favourite (I can't believe we are still friends then hehe) then swap it for shaved parmesan.
