Ingredients

  • 1000 g Potato waxy such as kipfler
  • 125 g Bacon or ham
  • 1/2 cup Sour Cream
  • 3 Eggs hard boiled, cooled and peeled
  • 100 g Cheese cut into small cubes
  • 1/2 cup Mayonnaise
  • 2 Red Onions finely chopped
  • 2 tsp Mustard

Our American Potato Salad recipe can be served both hot and cold.

Either way it’s bloody delicious!

My personal preference is I like it hot with Fried Chicken. Just for something different!

 

Method

  1. Cut the potatoes into large quarters (you can peel the skin off or leave it on) and boil in salty water for 20 minutes or until tender.

  2. Drain and allow to cool.

  3. Cut the quarters in half again.

  4. Cook the bacon or ham in a frypan until nice and crispy.

  5. Add all the ingredients into a bowl and stir very gently until well combined.

  6. Serve warm or cold!

Recipe Hints and Tips:

  • American Potato Salad is not suitable to freeze.
  • Best made fresh on the day it is eaten.
  • If you're not keen on mustard, substitute with curry powder - it gives it a bit of a kick!
