  • 400 g Red Or Pink Salmon
  • 1.5 cups Mashed Potato
  • 1/2 cup Plain Flour
  • 2 Eggs
  • 1 Brown Onion diced very finely
  • 1/2 cup Breadcrumbs
  • 1 tbsp Salt
  • 3 tbsp Canola Oil

Frugal Salmon Patties

My Mum used to make Salmon Patties for me weekly as a kid – she served it with a nice light crunchy salad – was a wonderful warm-weather food – and nice and filling!

Method

  1. In a bowl combine the mashed potato, salmon (flaked first), egg, flour, onion and salt and pepper.

  2. Mix until well combined.

  3. Roll balls into the breadcrumbs to form patties.

  4. Heat some oil a pan over medium to high heat, fry each side until golden. You can cook them in batches or use a large electric frypan to cook in one batch.

  5. Serve with a salad.

Recipe Hints and Tips:

  • Salmon Patties are suitable for freezing for up to 3 months or kept refrigerated for up to 2 days in an airtight container.
  • Left overs are nice on a sandwich with tomato sauce!
