This deliciously rich Chocolate Fudge Sauce is perfect over ice-cream. This is an adults only version – but you can leave out the brandy for the kids if you have to!
3/4 fill a saucepan with water and bring to the boil. Place a metal bowl on top and carefully heat the cream, butter and sugar together. Whisk until smooth. Break the chocolate up into small pieces and add to the cream mixture. Whisk until totally combined. Stir in the brandy a little by little and then cool the sauce to room temperature.
Serve on top of ice cream or on the top of profiteroles. Any unused sauce can be kept in the fridge for up to three days.
