White Sauce (or Bechamel Sauce)

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon plain flour
  • pinch of salt
  • 1 cup milk
  • 1 & 1/2 cups grated cheese

In a microwave jug melt the butter until frothy, add the flour and salt and whisk.  Microwave for 20 seconds to cook out the flour.  Add a small amount of milk and whisk until you get a creamy even consistency.  Whisk in the remaining milk and cheese.  Microwave for 30 seconds and whisk, repeat until nice and thick.  If the mixture gets too thick whilst standing, add a bit more milk and whisk.  Perfect for lasagna or served over chicken or corned beef.

Onion Sauce (Variation of White Sauce)

Ingredients:

  • 1 small onion diced
  • 1 tablespoon butter
  • 1 tablespoon cornflour
  • 1/2 cup milk
  • salt and pepper to taste

In a small saucepan, boil a cup of water and the onion together until the onion is cooked through and soft.  Add the butter and the milk and cook for another few minutes.  In a small cup make a paste with the cornflour and a tiny amount of water.  Add to onion mixture and cook on low until the desired consistency.  Is wonderful served on corned beef.

My white sauce (my mothers) is flour, butter, milk, chicken stock - turns out great! Then alter it to Cheese sauce with cheese (or for a more economical substitute - less cheese & powdered mustard).
