A perfect accompaniment to a roast dinner, rosemary potatoes are really easy and delicious and make for a nice change from boring old baked potatoes of old.

Ingredients:

  • 1kg chat potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons crushed garlic
  • 1 small handful of fresh rosemary needles
  • salt and pepper to season

Preheat the oven to 200 degrees.  Leaving the skin on, chop the potatoes in half and soak them in a bowl of water for ten minutes, then drain and pat dry with paper.  Add the oil to a baking tray and place the baking tray in the oven for the oil to heat up (4 – 5 minutes).  Remove the baking tray and add the potatoes.  Roast the potatoes for about 40 minutes or until golden and crisp.

Remove the baking tray and stir in the rosemary and garlic, mix well and return to the oven for another 10 minutes or until the garlic is browned.  Season well and serve piping hot!

Recipe Hints and Tips:

  • This recipe is not suitable for freezing
  • Rosemary Potatoes are great for use in Bubble and Squeak the next day!
