Potato Pancakes are a favourite with kids, this is nice and easy, cheap and delicious!  Grown ups will love them too!

Ingredients:

  • 3 large potatoes, peeled and grated
  • 2 eggs
  • 4 tablespoons breadcrumbs (packaged, not fresh)
Squeeze all the moisture out of the grated potatoes and discard the liquid.  Place in a bowl with the breadcrumbs and lightly beaten eggs.  Mix well to combine.  In a heavy frypan heat a little canola oil until hot.  Drop in spoonfuls of the mixture and press flat.  Cook until golden on both sides.

Serve the hot potato cakes with sour cream.

Recipe Hints and Tips:

  • Potato cakes are not suitable for freezing.
  • Add 1/2 cup grated cheddar cheese for Cheesy Potato Pancakes

    An even easier version: Grate half your potatoes, mix them in a little vinegar (to prevent browning), squeeze out as must liquid as posible and leave to drain in a sieve or collender for 30mins. Boil the other potatoes til tender, drain really well (I return the pot to the still hot element, shaking ocassionally to really dry them) then mash with salt and pepper. Stir to mixtures together. Fry spoonfulls of the mixture over med-high heat in butter and/or oil for about 5-10mins a side untill crisp. YUM!
