Zucchini Pancakes is a nice quick and easy snack for kids and adults alike! Suitable for breakfast, lunch and dinner, anytime of the year.
Place zucchini in a strainer or colander and sprinkle with salt. Allow to stand for 15 minutes. Rinse well and squeeze all moisture out. In a large bowl, beat egg whites until stiff. In a separate bowl, beat yolks then add zucchini, cheese and flour. Mix well then add to the egg whites, folding carefully. Fry spoonfuls in butter or margarine.
Eat nice and hot!
