When you are adding a payment card like store, credit, debit and prepaid cards to Apple Pay, information you provide about your card, whether certain device settings are enabled and device use patterns (e.g. per cent time device is in motion, approximate number of calls per week) may be sent to Apple in order to determine your eligibility to enable Apple Pay.

No because I prefer android.
But seriously, risks v benefits. If using Apple Pay is going to make your life a lot easier then its probably worth it. I use apps which give away my personal data only if I think the app is worth it.
