Bestest soup!

What are your favourite soups/ soup recipes if you don't mind sharing? I am a soup addict. I'm just out of practical and budget ideas!! I am total meativore but love every soup!!
And does anyone know how to make a beautiful soup stock, authentic like the base soups from Singapore take away places??
I'm dreaming of soup...... 😴

I love making soup I can give you 3 of our favorites 2 require a slow cooker though

potato soup (my youngest loves this always asking for it)
1kg potato
1 litre veg stock
600ml cream (evaporated milk also works)

peel, chop potatoes throw into pot with stock and cream bring to boil then simmer for 20min or until potatoes are cooked then blend it.

carrot and lentil soup
4 large carrots , chopped
1 cup rinsed lentils
2 litres chicken stock

combine in slow cooker, cook low 4-6hours, then blend.

pea and ham soup
2 brown onions, chopped
1kg approx ham hock
500g green peas
1 litre chicken stock

place everything in slow cooker, cook low 4-6hours, strip meat from bones and skin, return meat to soup and blend.

Sorry the last 2 recipes come from The easiest slow cooker book ever by Kim McCasker seriously love that book cant recommend it enough! The first is my own.

I throw in some bay leaves and 1-2 diced potatoes depending on their size into my pea n ham soup. Soooo good

Slow cooker pumpkin soup.
1,5 kg pumpkin, cubed
1 onion, quartered
2 potatoes, quartered.
1litre Vegeta vegetable stock
2 tsp curry powder

Put everything on slow cooker, cook on HIGH for 6-8 hours. Blend it with a stick blender then add 1 cup of thickened cream

This soup is the best ever. So easy to put together too!

My favourites are chicken and sweet corn and pumpkin. But I also love pea and ham soup but only if my mum makes it - ive tried an dmine tasted horrible compared to hers.

Love pumpkin soup with red curry paste and coconut cream. It's the only pumpkin soup my husband will eat. I also like minestrone, potato and leek with bacon, pea and ham, whatever's going really. Recently been doing Asian style noodle soups, with ramen noodles, shiitake mushrooms, carrot, bok choy, corn and chicken (I just bought a roast chook). Coles has a new range of liquid stocks, I used the pho version.

Oh yum, what's the pho stock like? Could you use it for other soups?

I liked it. Going by the ingredients it's pretty much chicken broth with aniseed, coriander seed, white pepper, onion, ginger, cinnamon, cloves, lemongrass and garlic. Plus salt, sugar and oil etc. Would suit other soups that the flavours go with.

I also bought the mushroom miso version, haven't tried that out yet. There was also a ramen version, but it pretty much just appeared to be chicken stock.

On Campbell's stock packets I think, they have this lovely chilli dim sim soup, Its very simple
