Yes. And if I’m worried it will defrost before I can put it in the fridge I put a big ice brick underneath and on top so it defrosts more slowly

In summer I try to remember to put it in the fridge the night before. If I leave it on the kitchen bench it can defrost in a couple of hours max. So if it sat out all day that would be too long at room temperature to be safe.
I cut up chicken fillets into long pieces & wrap singly in glad wrap, and freeze. That way, I can cut it from straight out of the freezer.

I'm not organised enough to put out something to defrost (so I use the microwave) but my mum always defrosts on the bench/sink and there's never been an issue.

Yes, I always defrost stuff in the sink - if it's on the bench the blood might run out everywhere.
I always get meat out in the morning and its defrosted when i get home from work then pop in it the fridge until cooking time

Sometimes I do. Place it in a sealed container and leave it in the microwave. If I am organised and know what I might cook a day or two in advance I’ll will defrost in the fridge.
