Meal ideas to feed 30 - 40 people, suggestions please!

We do an annual party with all our friends, looking for ideas to feed everyone that isn't too much work or cost too much. Previously we've done meat and gravy rolls, pulled meat rolls, diy hamburgers and sausage sizzle. We do the main/meat and I usually ask everyone to bring a salad, snacks or dessert to share. We're in Australia and it's summer so not doing curry, slow cooker meals, soup etc (have done these for other parties in cooler months). We often invite/have extra people come at the last minute so needs to be something that it's easy to do extra of. Look forward to hearing suggestions, Thanks!

Tacos! Cook a big batch of Mince and do some beef or pork in the slow cooker, make up a couple of different salsas, sour cream, cheese, sauces and heat up some tortillas and shells and you're done!

American style hot dogs? The franks cook really nicely in a slow cooker. Or maybe a massive pot of nacho mince? Team it with nacho chips or wraps , rice or baked spuds. That way people can kind of choose their meal type.

Baked potatoes. Bake a stack of spuds (normal and sweet potatoes work) in foil (might have to do a couple batches), store in a esky or insulated bag to keep warm. Serve with butter, minced garlic, coleslaw, bacon bits (or shredded ham if easier), corn kernals (tinned), sour cream, cheese, spring onions etc. We've done this a couple times although not for that many people, but everyone enjoys it.

Forgot to say this is for kids and adults. Youngest kid is 10 though, with most being in their teens.
