I've made many meals from roast potatoes. My fave is roasting them, smothering with grated cheese then baking till it melts

You could have theme nights just for something different. Mexican night, Italian night, Moroccan night, American night, Mediterranean night etc. Make it fun. There's not enough fun in the world.

I made chciken macaroni. Made extra sauce with pureed veges and tomorrow will just make rice and use sauce with rice

Pork chops, baked mushrooms, corn and borlotti beans tonight. Lamb stew with homemade bread tomorrow.

I slow cooked a cheaper cut of lamb in stock water, then removed some of the water once it was falling apart and made a gravy with the stock . Served with a potato, sweet potato, and pumpkin mash with bacon mixed in, and broccoli on the side. It's my go to when I want an easy night.

Vege patties
Just miced some carrots, porators, zucchini and bresdcrumbs all at same time in food processor
Rolled and sprayed some olive oil and cooked them on frypan
And hot chips on side

5 of us here who eat solids 😂 Tonight we are doing take away. Tomorrow night will be slow cooked ribs, home made wedges and salad. Ribs are marinading now ready for tomorrow to go in the slow cooker.

Cottage pie tonight. The other night I cooked up chicken thighs with some garlic. Put it in a casserole dish with heaps of pasta and a bag of frozen mixed veggies. Added a bit of milk to a can of condensed cream of chicken soup. Poured it in dish and stirred. Mix bread crumbs with melted butter and cheese to make a crusty topping. It made 7 serves and was so yummy.

Eggplant Parmigana.
Crumb the sliced eggplant (1cm thick sliced)
Fry it in shallow olive oil till golden both sides.
Tin tomatoes mixed with 1 tbs of white wine vinegar, mix chives and garlic through tomatoes as at the bottom of a bake tray, layer egg plants over top, add remainder of tomato over the top then a bit of cheese and bake for about 10 minutes.

Tastes similar but better than chick parma.
I like to ad sprouts to the tomato base.
I serve with a side of baked zucchini and beans, I use garlic olive oil to coat before and bake for 10minutes with the Parma.
It’s delish.
You can also caramalise onions and layer them under the cheese or serve on the side but my kids hate onions so I rarely do it just for myself or hubby.

Lunch I’m having couscous with roasted veg and halloumi. 5 minutes prep, 15 minutes cooking.
Yummy yummy lunch (pumpkin, holiumi, broccolini, zucchini, capsicum and red onion , coated with lemon pepper garlic olive oil and then lemon rind in the cous cous, with a lemon wedge on the side.

Lasagne. Have an extra today for I don't know how long as her dad's gone into hospital today so that'll do 6 of us for today and some left for tomorrow probably.

6 here too. Made homemade pizza base with tomato paste base, capsicum, pepperoni and cheese topping last night with homemade brownie for dessert (was my day off work). Sausages with mash and corn, carrots and sweet potato tonight.
