
Well well well, it’s about time we use those trays again. School’s back!
Muffins are always in my boys’ school lunches as I love that you can make them ahead, freeze them, and just pop them into their lunch box where they’ll defrost and be perfect and fluffy by the time it gets to morning tea time.
Plus when you make them yourself at home, you know exactly what ingredients are going into your child’s lunch.
Some shop bought ones are frighteningly full of sugar, so make these recipes in bulk, and freeze them for later!
Savoury Herb Zucchini Muffins
The secret ingredient in here (well not so secret) is the zucchini. It makes them delicious and moist, even if you do freeze them!

Sultana Cinnamon
Using wholemeal flour in your home cooking is a good way to hide a healthy ingredient from the kids…. Just remember if you are substituting wholemeal flour for normal flour in any recipe, you need to add a little bit more liquid or it will be dry! Not in this recipe though – it is made with wholemeal flour, rolled oats and sultanas!

Healthy Sour Cream Blueberry Muffins
I have included a little brown sugar in this recipe, but please, feel free to just leave it out or alternatively substitute it with the same amount of apple puree. My blueberries were a little tart, so give your blueberries a try before making these to judge how much or little sugar to add!

Muffins don’t need to be sweet! In fact, I think savory ones are so much better as not only can I make them for the school lunches, but I can heat them up with a little butter and have them for morning tea or a really light lunch. Plus they are a great way to use up odds and sods of vegetables in the fridge!

Gluten Free Banana, Coconut and Blueberry Muffins
There are so many options for people sensitive to Gluten or Celiac now. With gluten-free flours being so readily available, it does make it easier to live with the condition. This recipe uses Almond Meal instead of flour, which is delicious regardless of any allergies you might have.
