  • 1 Apple peeled, cored and grated
  • 2 tbsp Canola Oil
  • 1/2 tsp Ground Cinnamon
  • 2 tbsp Milk

Apple Teacake in a Mug is fun and different to make, not to mention the ultimate solution for all those times you craved for an apple pie but did not have the time to bake one! This recipe makes two large mug cakes.

Method

  1. Distribute the dry ingredients evenly between two large mugs and stir well.

  2. In a jug, combine the egg, milk, oil and apple. Stir well and add half in each cup.

  3. Using a dessert spoon, mix the two mugs well making sure you get all the dry flour in the bottom.

  4. Cover the mug loosely with cling wrap and microwave on high for 2 minutes (based on an 800 watt oven).

  5. Allow to stand for a minute to cool slightly, then carefully run a knife around the inside to loosen.

  6. Tip the cake out onto a plate and serve with butter and a sprinkle of cinnamon and white sugar or nutmeg, or you can add custard, whipped cream or ice cream!

  7. Apple Teacake in a Mug is not suitable to freeze.

  8. You may need to adjust the cooking times depending on your microwave to avoid overcooking the cake. Try cooking for 1 minute, and if it needs longer, additional bursts of 15 seconds until it is cooked to your liking.
