Want something a bit special for breakfast instead of the usual bacon and eggs or pancakes?  Try this idea – our Baked Breakfast Baguettes.

Method

  1. Preheat oven to 180 degrees.

  2. Cut through the tops of each baguette until about a half way through.

  3. Pull out some of the inside of the baguette and set aside.

  4. Place the eggs and cream into a mixing bowl and lightly beat together.

  5. Whisk in the remaining ingredients and lightly season with salt and pepper.

  6. Divide and pour the mixture into each baguette and place onto a tray lined with baking paper.

  7. Bake for 20 to 25 minutes or until golden brown, puffed and set in the centre.

  8. Baked Breakfast Baguettes are not suitable for freezing.

  9. Best eaten hot and fresh from the oven.

  10. Baguettes are available at most bakeries (including the big supermarkets) - but you can substitute baguettes for sour dough bread.
