Breakfast can be a tricky meal to get right, especially if you’re a busy mum with kids to feed. You want something that is healthy and nutritious, but that is also quick and easy to make. These banana raspberry coconut baked oats are the perfect solution.

They are packed with all the nutrients your body needs to start the day, but they are also fun and easy for kids to eat. And best of all, they can be made in advance, so you can have a healthy breakfast on the table even on the busiest of mornings.

Method

  1. Preheat the oven to 180 degrees

  2. Mix milk, egg, maple syrup and vanilla in a small bowl.

  3. Mix the oats, cinnamon, half the raspberries, coconut and one banana together in another bowl then add to an ovenproof baking dish.

  4. Pour the wet mixture over the dry mixture, making sure it's all covered evenly.

  5. Top with the remaining raspberries and the other banana.

  6. Put in the oven and bake for 40 minutes or until golden on top.

  7. Serve with yoghurt.
