  • 2 Beetroot grated
  • 1 tsp Psyllium Husk Powder or another egg replacer (i.e. flax or chia)
  • 1/2 Brown Onion diced finely
  • 2 tbsp Fresh Basil chopped

Brightly coloured food just appeals to us, and these Beetroot ‘n’ Basil Turkey Burgers are not exempt. The vibrant colours of the beetroot means they’ll make a statement on your plate even before you take a bite and realise how delicious they are. It’s a win-win situation.

Sure, there’s always a bit of apprehension when using beetroot, particularly if you don’t want your kitchen to look like a murder scene. But as long as you’re careful to wash up anything with beetroot juice on it pretty fast, you’ll have a rainbow meal that tastes as good as it looks!

Beetroot 'n' Basil Turkey Burgers

Method

  1. Mix the turkey mince, grated beetroot, onion, basil and psyllium husk together using your hands until well combined. If you don't like a strong onion flavour, you can soak the onions in water for 10-15 minutes prior to adding them to the mix.

  2. Using your hands divide the mixture into 5-6 burger shapes, setting aside on parchment paper once they're formed.

  3. Wash your hands and any other beetroot stained items while warming a non-stick pan on a medium heat.

  4. Cook the burgers for 5-8 minutes on each side, or until cooked through.

  5. Serve in a burger, or with a side of salad.
