Berry Lemon Danish

My kids Love Danishes, they are easy to make, easy to reheat and very easy to eat. They not only smell delicious while cooking, they will have you coming back for more every time! These are not overly sweet but you certainly can add some extra honey in if you are a sweet tooth.

These will make your house smell seriously amazing! You can even freeze them afterwards to eat at a later date or even pop them in the kids lunch box for a treat.

Berry Lemon Danish

Method

  1. Preheat the oven to 180 degrees

  2. Line an oven tray with baking paper, using a glass to cut out as many pastry discs as possible

  3. In a bowl or processor add cottage cheese, lemon zest and juice, honey and vanilla.

  4. Mix the ingredients until smooth

  5. Place Pastry the pastry discs on a lined tray

  6. Place 1 tbsp of filling in the center of each disc

  7. Top them with berries

  8. Brush the outer ring of pastry with the egg wash

  9. Bake them for approximately 30-40 minutes until golden and puffy
