Boozy Onion Gravy – I can’t begin to describe how perfect this combination is. This gravy is wonderful with veggie bangers and mash, bean burgers, and some nut roast.

Method

  1. Melt the butter in a heavy pan and cook the onion for 10 minutes until soft, then turn the heat down low, cover the pan and cook until the onions are brown; about 20 minutes.

  2. Stir in the flour and cook for a minute then add the wine, stock, Worcestershire sauce and mustard. Whisk any lumps in the flour out.

  3. Bring the gravy to the boil and simmer for around 15 minutes stirring frequently.

  4. Adjust seasoning to taste and serve.
