  • 1 Cup Water to boil lentils in
  • 1/3 cup Tinned Lentils
  • 1/2 cup Sugar, Castor
  • 75 g Butter
  • 2 Eggs
  • 2 tbsp Golden Syrup Or Treacle
  • 1.5 cups Flour Self-Raising
  • 1 tsp Cinnamon
  • 1 tsp Ginger
  • 1 tsp Nutmeg
  • 1/2 cup Sultanas
  • 2 Carrots grated

Method

  1. Preheat oven to 180 degrees.

  2. Bring lentils to the boil, simmer uncovered until tender, drain well.

  3. Cream butter and sugar, add treacle, mix well. Add eggs and beat well.

  4. Stir in carrots, lentil, sultanas, sifted flour and spices, mix well.

  5. Spread mixture in prepared loaf pan 15 x 25cm.

  6. Bake in moderate oven for about 1 hour.

Recipe Hints and Tips:

  • I have used gluten free flour but found i needed to add a little more liquid - depends what mix of flour you use I think.
