Caramel Pear Bread is just the recipe when you have a glut of over-ripe pears starting to rot in the fruit bowl… and it is just delicious! It would be totally awesome still warm with butter on it… mmmmmm!

- 2 cups Plain Flour
- 1/4 tsp Baking Powder
- 1/4 tsp Bicarb Soda
- 1/2 tsp Salt
- 1/2 tbsp Cinnamon
- 1/2 cup Brown Sugar
- 1/2 cup Vegetable Oil
- 2 Eggs
- 1 1/2 cup Pears cored, peeled and chopped
- 1/2 cup Pecans optional
- 1 tsp Vanilla Extract
- In a large bowl, combine flour, baking powder, bicarb soda, salt, cinnamon and sugar.
- Add oil, eggs, pears, pecans (if using) and vanilla. Mix until just combined.
- Pour into a greased or lined loaf tin and bake at 165 degrees for 45-50 minutes or until inserted skewer comes out clean.
