  • 1 Carrot grated finely
  • 2/3 cup Oats
  • 1/2 cup Milk dairy or otherwise
  • 2 tbsp Honey
  • 2 tbsp Sultanas
  • 2 tbsp Cream Cheese
  • 2 tbsp Greek Yoghurt
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Nutmeg
  • 1/2 tsp Vanilla Extract

If you’ve never tried this non-cook method of making oats, then this Carrot Cake Overnight Oats recipe might be for you. It’s all the flavours you love about carrot cake, but contained in a container of oat-ey breakfast goodness. Plus, it takes 5 minutes or less to prepare, yay!

Method

  1. Put the oats in a sealable, airtight container.

  2. Add in the carrot, milk, sultanas, honey, yoghurt, cream cheese, vanilla extract and spices. Stir.

  3. That's it! Pop it in the fridge and leave it for at least 5 hours (overnight is best) so the oats can absorb all the liquid in the container.

  4. When you're ready to eat, remove the container and stir the oats. You can eat them cold or microwave for around 2-3 minutes to enjoy them warm.
