  • 2 tbsp Caster Sugar
  • 1/2 cups Coconut dessicated
  • 110 g Butter melted
  • 1 Pinch Salt
  • Topping
  • 200 g Condensed Milk
  • 1 cup Coconut dessicated
  • 1 tbsp Cocoa Powder
  • 1.5 tbsp Butter melted
  • 1 tsp Vanilla Extract
  • 1 cup Icing Sugar

Method

  1. Line a standard lamington tin with baking paper and preheat the oven to 180 degrees.

  2. To make the base in a bowl, sift the flour, cocoa and salt and stir in the sugar and coconut.

  3. Add the melted butter and mix well.

  4. Press into the lamington tin and bake for 20 minutes.

  5. For the topping, combine all the ingredients and mix well.

  6. When the slice has cooled slightly, spread the topping evenly over it.

  7. Cut into slices when cold.
