  • 800 g Four Bean Mix rinsed
  • 2 Spring Onion thinly sliced
  • 1/2 Red Onion thinly sliced
  • 1/2 cup Capsicum chopped, char-grilled
  • 1/4 cup Vegetable Oil
  • 2 tbsp Red Wine Vinegar
  • 1 Garlic Clove crushed
  • 125 g Corn Kernels rinsed

I love this Marinated Four Bean Salad. So light and easy, a great side dish for any meal.

Method

  1. Place bean mi, green onion, red onion, capsicum and corn in a bowl

  2. Whisk oil, vinegar and garlic in a jug. Season

  3. Pour over bean mixture; toss to combine.

  4. Cover with plastic food wrap; chill for 2 hours to marinate. Serve

Recipe Hints and Tips:

  • Makes a great side dish with any Mexican dish
  • Add a tin of tuna for a great lunch time meal
