Ingredients

  • 3 tbsp Sugar
  • 7 g Dry Yeast (or 2 1/4 teaspoon)
  • 1 Egg
  • 3 tbsp Oil
  • 2.25 cups Plain Flour
  • 1/2 cups Milk or buttermilk, warmed.
  • 1/2 cups Strawberry Jam (or any jam flavour of choice)
  • Glaze:
  • 1/3 cups Cream Cheese
  • 1/3 cups Icing Sugar
  • 3 tbsp Butter
  • 1 tsp Vanilla Extract

Sweet Strawberry Scrolls with Vanilla Cream Cheese Glaze

Been looking for ultimate heaven on a plate? Then look no further than these beautiful Sweet Strawberry Scrolls with  VanillaCream Cheese Glaze!

This is like cinnamon scrolls on crack.  Perfect for a dainty morning tea, a baby shower or just make it spoil someone you love.

Make sure you buy the very best quality Strawberry Jam you can find – it really makes a big difference.  For our recipe we used the Beerenberg brand of Strawberry Jam – it is my personal favourite – tastes just like a home made version.

Method

  1. Place all ingredients into your breadmaker and run on dough setting.

  2. Make sure it rises at the designated time.

  3. If you don't have a breadmaker, gently combine all dry ingredients in a bowl and gradually add the egg (lightly beaten) and warmed milk and either mix with a paddle attachment on your mixer, or combine and knead gently by hand if you're old school. Leave in a warm, dry spot until the dough doubles in size.

  4. Preheat oven to 180 degrees.

  5. Roll out the dough into a large rectangle and smother with jam.

  6. Roll from the long end until you have a spiral log and cut into scrolls, approximately 4-5cm in width.

  7. Pop scrolls on their side (scroll face up) on generously greased pie or baking dish and bake for 25-30 mins. If the edges of your scrolls start to burn, cover with alfoil to ensure the middle cooks.

  8. Combine all the glaze ingredients in your mixer bowl and beat on a high speed until thick and creamy. Glaze should be an almost runny consistency, but not so runny that it runs completely off your scrolls. Drizzle over warm scrolls.

  9. Sweet Strawberry Scrolls with Vanilla Cream Cheese Glaze are suitable to freeze un-iced for up to two weeks.

  10. Baking in a pie or baking dish and placing them close together ensures your scrolls will not unravel whilst cooking.
