I’m forever making cakes for birthdays, or some kind of celebration. So I enjoy mixing it up when it comes to the icing. Some I use simply for taste, others I like to pipe with. Here are just a few of our favourite Basic Icing Recipes to keep you going.

Ingredients

Plain Icing

  • 2 cups Icing Sugar sifted
  • 2 tbsp Milk

Vanilla Icing

  • 2 cups Icing Sugar sifted
  • 2 tsp Butter
  • 1/2 tsp Vanilla Extract
  • 2 tbsp Milk

Simple Chocolate Icing

  • 2 tbsp Cocoa sifted
  • 1 1/2 cups Icing Sugar sifted
  • 2 tbsp Milk

Chocolate Frosting Icing

  • 2 cups Icing Sugar sifted
  • 5 tbsp Cocoa sifted
  • 5 tbsp Butter at room temperature
  • 4 tbsp Evaporated Milk
  • 1 tsp Vanilla Extract

Whipped Chocolate Icing

  • 100 grams Butter at room temperature
  • 1 cup Icing Sugar sifted
  • 100 grams Dark Chocolate (melted and cooled)

Cream Cheese Icing

  • 250 grams Cream Cheese (such as Philly)
  • 4 tbsp Icing Sugar sifted
  • 2 tsp Lemon Zest

Mock Cream Icing

  • 2 tbsp Butter
  • 2 tbsp Caster Sugar
  • 2 tbsp Hot Water
  • 2 tbsp Milk
  • 1/2 tsp Vanilla Extract


Method

Plain Icing.

  1. Add sifted icing sugar to a bowl and gradually add the milk until you achieve the required consistency.

Vanilla Icing.

  1. Beat together the butter and icing sugar.
  2. Add the vanilla and gradually add the milk until you reach the required spreading consistency.

Simple Chocolate Icing.

  1. In a bowl sift the cocoa and icing sugar.
  2. Add the milk one tablespoon at a time and mix to desired consistency.
  3. Spread over a cold cake.

Chocolate Frosting Icing.

  1. Sift dry ingredients together in a bowl.
  2. In another bowl beat the butter and vanilla until creamy.
  3. Gradually add the dry ingredients to the wet ingredients - use the milk to achieve the required consistency.

Whipped Chocolate Icing.

  1. Cream the butter and sugar, add the melted chocolate.
  2. Stir until well combined.
  3. Ice the cake as required.

Cream Cheese Icing.

  1. In a mixing bowl combine the ingredients and beat on high speed until thick and creamy without any lumps - Perfect on carrot cake!

Mock Cream Icing.

  1. Cream butter and sugar well.
  2. Continue beating while you slowly add the hot water alternatively with the milk until all the sugar is dissolved.
  3. Add vanilla and food colouring if required.
  4. Mix until well combined.

Notes

Recipe Hints and Tips:

  • Basic Icing Recipes are not suitable to freeze.
  • These can be made a day or two ahead of time, but they tend to go hard when you store them in the fridge. Leave them out of the fridge until room temperature and then stir until a smooth consistency.
  • PLEASE NOTE: You may need a little more milk than is specified.
