Ingredients

  • 2 Chicken Breasts
  • Cornflour to coat the chicken
  • 2 tbsp Oil to shallow-fry the chicken
  • 1 cup Chicken Stock
  • 1 Lemon (juice)
  • 1/2 tsp Dry Ginger
  • 2 tbsp Honey
  • 220 g Pineapple Chunks In Juice
  • Cornflour to thicken sauce

Easy Lemon Chicken

As the name suggests this is a very Easy Lemon Chicken to make; it doesn’t take long to prepare and cook and is a tasty meal.

Method

  1. Cut chicken into bite sized pieces.

  2. Toss in cornflour until evenly coated and fry in small batches until crispy.

  3. To make the sauce, bring the stock, lemon juice, honey and ginger to the boil, then simmer for a couple of minutes.

  4. Add the pineapple and juice of half the tin and bring back to a simmer.

  5. Taste the sauce to check if its not too lemony or sweet. If it is too bitter add a little more honey to taste or if it is too sweet add a little more lemon.

  6. Once you're happy with the taste, combine some cornflour with water and add to the sauce to thicken it.

  7. Put the sauce over the top of the hot chicken and serve. Serve with a simple Fried Rice.

  • Easy Lemon Chicken's leftover sauce can be frozen and used for next time.
  • Try this same method using pork for a different twist.
