Ingredients

  • 100 grams Butter Softened
  • 200 ml Honey
  • 1 1/2 tbsp Water
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1 cup Apple Sauce or pureed, stewed apples
  • 165 grams Sultanas
  • 2 cups Plain Flour
  • 1 tsp Bicarb Soda
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 1/2 tbsp Canola Oil
  • 2 tsp Corn Flour


Method

Cream together the butter and honey. In a small bowl, combine the water, oil and baking powder then add to the butter mixture, as well as the vanilla and apple sauce. In another bowl, combine the flour, cornflour, bicarb soda, cinnamon and nutmeg then add the sultanas and mix well. Gently fold the dry ingredients into the wet mixture. Pour into a greased loaf tin and bake at 180 degrees for 35-40 minutes or until lightly golden.
