  • 1 tsp Bi-carb Soda
  • 1 tbsp Ground Ginger
  • 1 tsp Mixed Spice
  • 1 cup Brown Sugar
  • 3/4 cup Olive Oil
  • 1 cup Golden Syrup
  • 2 Eggs, Beaten
  • 3/4 cups Milk
  • Cream Cheese Frosting
  • 1 cup Cream Cheese
  • 1 tsp Vanilla
  • 1/8 tsp Salt Flakes
  • 1 3/4 cups Icing Sugar
  • 1 tsp Cinnammon

Gingerbread Cake With Cream Cheese Frosting

Gingerbread cake is super delicious. Added with cream cheese frosting and it’s heaven in your mouth!

Ginger is such a delightful spice and tastes so amazing when cooked in a scrumptious cake. Cakes are so easy to make and pop in the oven – serve this up on Christmas Day as dessert, or even wrap up to give to family and friends as a homemade baked gift!

Gingerbread Cake With Cream Cheese Frosting

Method

  1. Preheat the oven to 180 degrees

  2. Grease and line around the cake tin

  3. Sift flour, bicarb soda, ginger, mixed spice in a bowl and add sugar and stir

  4. Combine oil, golden syrup, egg and milk together in another bowl

  5. Add wet ingredients into a flour bowl and stir until combined

  6. Pour into lined cake dish and bake for 30-35 minutes until skewers come out clean

  7. Cool for 10 minutes the transfer to a wire rack

  8. Mix cheese, vanilla and slat together with electric mixer until light and fluffy.

  9. Slowly add icing sugar at lower speed and spread evenly over cake

  10. Cut the cake in half and layer with frosting and second layer the cake finishing with frosting.

  11. Top with little gingerbread men and rosemary to garnish
