  • .3 cup Walnuts finely chopped, plus more for topping
  • 600 g Chickpeas or about 1.5 cans, drained and rinsed
  • 1.5 tbsp Vanilla Extract
  • 1.5 tsp Cinnamon
  • 1/4 cup Butter melted
  • 3 tbsp Maple Syrup
  • 0.3 cup Brown Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder

Many people look at blondies as the lesser cousin of the brownie, but these Gluten Free Chickpea And Walnut Blondies stand on their own. Not only are they gluten free, they’re also super fudge-y, buttery and laced with cinnamon. So many delicious flavours, we don’t even know where to start!

Also, while these are gluten free, they definitely aren’t healthy by any measure, so treat them as treats only!

Method

  1. Preheat oven to 175C.

  2. In a food processor add the chickpeas and puree until mixture has a smooth consistency.

  3. Pour this chickpea mixture in a bowl along with the vanilla, eggs, maple syrup and butter. In another bowl mix together the sugar, cinnamon, salt and baking powder.

  4. Mix the dry into the wet mixture, adding in the walnut pieces as you go.

  5. Pour the mixture into a greased pan, about 15 x 15cm for thicker blondies and 20 x 20cm for thinner ones. Bake for 45 minutes, or until the top and centre of the blondies are firm.

  6. Remove from oven and allow to cool for a moment before topping with additional whole walnuts, pressing them into the top gently.
