Banana bread is the ultimate breakfast food for us, which is why we jumped on the Healthy Paleo Banana Bread recipe, which we think is probably the healthiest way to actually eat banana bread for brekkie.

The great thing about this is that it’s a one-handed recipe, easily eaten on the go when you’re dropping kids off at school, or running other typical parenting errands. It’s also a cinch to eat when you’re holding a baby, nursing, or generally just too exhausted to eat with both hands!

NOTE: Make sure you get real maple syrup, not ‘maple flavoured syrup’.

Healthy Paleo Banana Bread | Stay At Home Mum

Method

  1. Preheat the oven to 160 degrees and grease a pan about 1.5L in volume with coconut oil or by lining the pan in baking paper.

  2. Mash the bananas together with the maple syrup, vanilla extract, cinnamon and bicarb soda. In another bowl combine the coconut oil and the eggs until well mixed. Set both bowls aside.

  3. In a third bowl mix the almond meal and baking powder. Fold the mashed banana mix into the egg and coconut mix, then fold that into the almond meal. Pour in the nuts and mix gently to spread.

  4. Pour the mixture into a pan and bake for about 55 minutes, or until a skewer inserted comes out clean from the middle of the pan. Cool for about half an hour in the pan before attempting to remove it. You can drizzle extra maple syrup and cinnamon on top if you choose.
